Hello! My name is Shelly. I am a registered dietitian passionate about Health At Every Size, Intuitive Eating, and allergies. I am originally from a small town in Kentucky and moved to Colorado about a year and half ago. I graduated with a bachelor's degree in general dietetics from Eastern Kentucky University and completed my dietetic internship with Garden to Table Nutrition. When I’m not doing all things nutrition and allergies, I find joy in hiking, biking, running, cooking (and eating!) playing with my puppy, and exploring local coffee shops and breweries!

Hi, My name is Bricee! I am originally from South Dakota, but moved to Colorado for college right out of high school. I attended the University of Northern Colorado and graduated with my B.S. in Nutrition and minor in Psychology. I joined MenuTrinfo because it was a new side of nutrition I knew affected a multitude of the population, and I knew it was a job where I could visibly see my positive impact on people. I am so thankful to be a part of such an amazing team with an even more amazing purpose! When I'm not working I love adventuring and hiking around CO, trying new restaurants and ice cream, traveling, and spending time with my friends and family!

Most call me Lauren, others call me mom or Wonder Woman. I am pleased to have the opportunity to work with the leading Nutrition Analysts and Allergen Educators in the country. I am thrilled to contribute my formal background in nutrition and my passion for allergen awareness. Seeing my family struggle with diabetes and gluten, it’s a personal investment of mine to accurately provide information on ingredients and nutrition.

Sarah Kent
VP of Risk Management
Sarah is the VP of Risk Management. She graduated from the University of Wyoming with an accounting degree in 2000 and has worked in finance ever since. Sarah joined the MenuTrinfo team in 2017. The mission of MenuTrinfo is important to her and many of her family members. Sarah was excited when she came across the job opening at a local company that protected those with food allergies. Sarah and her husband have lived in Colorado for over 20 years and have 3 children. She enjoys cheering her kids on in their sports. Her family enjoys traveling, the beach, hiking, camping, skiing, and playing with their Bernese Mountain Dog.
Claire Peacock
VP of Product Fulfillment
Claire Peacock has been with MenuTrinfo since 2012 when she was a student at Colorado State University. After graduating with her degree in Biomedical Sciences, she joined the team full-time as a nutritionist, and over the years has grown with the organization and is now the VP of Product Fulfillment. When she's not making sure all of our nutrition, training, certification and consulting clients are happy, she's enjoying the Colorado outdoors with her husband and two dogs. My likes: Hockey (go Avalanche!) Trying out new recipes at home Visiting National Parks Road trips through the Rocky Mountains 90s country music My why: My ultimate goal is helping our clients breathe easier at night, knowing that we have their backs. Regardless of the service we're providing, it pushes me every day to get them the tools they need to serve their guests more confidently.

Nancy Roe
Nancy Roe is an Administrative/Fulfillment professional at MenuTrinfo LLC, where Nancy organizes and prepares shipments, orders supplies, processes invoice payments and provides administrative support for multiple departments. Nancy handles customer inquiries and product orders with a friendly and professional demeanor. Nancy has worked with big brands such as Kroger, Sodexo, Kellogg’s, General Mills and Sysco. Having spent the last 20 years in higher education, Nancy has established long standing relationships with Colleges and Universities as well as thousands of large and small corporations and government agencies. Nancy is a huge animal lover and sportswoman from Fort Collins, CO
James Ross
I'm in my fourth year of undergrad at CSU studying Exercise Science with a Nutrition minor. I'm originally from Takoma Park, Maryland. I began college just doing Exercise Science but decided to add the minor after taking a nutrition class since I found it so interesting. That interest has grown through the past couple years and culminated with me joining the MenuTrinfo® team in August 2021. I'm so glad I did, too. MenuTrinfo is such a supportive and positive environment! When I'm not at work or in class, I try to spend as much time as possible outside: camping, hiking, biking, skiing, you name it!
Lindsey Stento

was first drawn to a career at MenuTrinfo because my cousin had an allergic reaction to peanuts that ended tragically a few years ago. Ever since then I have had a strong passion for spreading awareness on the importance of food allergy safety. As a Training and eLearning Fulfillment Specialist here at MenuTrinfo, I am able to support the food allergy community by providing updated resources to schools, restaurants, and more! I was born and raised in upstate New York but moved to sunny Colorado just four short years ago for college. I graduated from The University of Colorado-- Boulder in May 2021 with a bachelor's degree in Psychology with a focus in Nutrition. In my free time I enjoy skiing at one of the many mountains Colorado has to offer, baking sweet treats, and going on hikes with my 9 month old black lab puppy. I am so grateful my job allows me to advocate for those living with food allergies!
Laurel Whisker MPH

Laurel joined MenuTrinfo as a Culinary Nutritionist in 2016 after graduating from Colorado State University. She is currently the VP of Product Development and Accreditation where she oversees the accreditation of the company's certificate programs and certification body and manages various development projects. Laurel holds a bachelor's degree in Dietetics and Nutrition Management as well as a Masters of Public Health. She enjoys baking, traveling, hiking, and spending time with her husband and their two children. My Why: 1. Making a difference in the lives of so many people while using my education, years of restaurant work, and love of food. 2. Supporting a business that supports their employees and a team of people that genuinely care about each other! Professional likes: Making a client happy. It's a great feeling to deliver exactly what they need when they need it.

I’ve been in sales most of my professional career. It’s the passion that runs through me. I am a mom to two kiddo’s, Addie and Gage. I have an amazing husband, Gary. The reason I came over to MenuTrinfo is because my daughter has an allergy to shellfish and I am vegetarian. We’ve been reading labels for years. I noticed a big need for more Allergy Awareness. I love that I can help get the word out to schools, restaurants, CPG companies and so many other people and companies. We are out here Saving Lives!
Beth Winthrop MS, RD
Food Allergy Specialist & Certified AllerTrainer
Beth Winthrop received her BS in nutrition from Cornell University and completed a combined Master's degree and dietetic internship at Tufts University and the Frances Stern Nutrition Center in Boston. Beth had a long career as a clinical nutrition manager, regional clinical manager, and dietetic internship director for Sodexo healthcare, spending the past 8 years with Sodexo Universities. For Sodexo Universities, Beth developed the "My Zone" personal pantry, and Sodexo's Simple Servings; the allergen-safe resident dining option which won Food Managements' 2013 Best Wellness Concept and the 2017 AllerTrain Best Food Allergy Innovation for Universities award. Beth also worked with the Kent University dining team to develop the first completely gluten-free University dining venue at Prentice Hall, and to achieve certification from the Gluten Intolerance Group.
